It doesn’t have to be complicated to eat healthily!
This meal couldn’t have been easier!
✅ I cooked a batch of quinoa in vegetable stock in my pressure cooker.
✅ I cooked this piece of halibut FROM FROZEN in my pressure cooker - just put some salt and pepper on the frozen filet - 8 minutes + the time it took for pressurization.
✅ Topped my fish with a few greens and a drizzle of olive oil.
And there you’ve got it: a hands off dinner with my protein coming straight from the freezer!
Yogourt Treat!
If you’re tempted to grab the ice cream tonight – plan ahead today and make this yummy treat instead!
🥄Spread 1 c Greek yogourt on a parchment lined cutting board
🥄 top Skyr with cacao nibs and diced cherries
🥄 freeze 2-3 hours
🥄 remove from freezer and cut into bark pieces
🥄 drizzle with sugar free chocolate sauce
Potato and Cauliflower Salad
This week I’m focused on continuing to eat my planned healthy food – it’s something I can control! This potato cauliflower salad is a perfect lunch or dinner. It isn’t freezer friendly…but if you have a bit of spare time on your hands this week (or next) and have the ingredients available, it’s a good one!
To make 4 servings:
🥄 4 russet potatoes, boiled, cooked and cut into bite sized pieces
🥄 1 head cauliflower cut into florets and then briefly boiled just to soften
🥄 8 slices turkey bacon cooked and chopped
🥄 1/2 c shredded cheddar cheese
🥄 4 diced green onions
🥄 2 c Greek yogourt
🥄 2 tbsp djion mustard
🥄 1 tbsp smoked paprika
First, mix together the Greek yogourt, mustard and paprika. Mix together all remaining ingredients and serve.
