Maple Blueberry BBQ Chicken Wings
Is this even a thing? It is now! These didn’t photograph super well, but they were tasty!
Serves 2
🥄6 boneless skinless chicken thighs, cut into thirds
🥄 ⁣1/3 c flour
🥄1/2 tsp salt
🥄 ⁣1/3 tsp pepper

🥄 ⁣1/4 c sugar-free maple flavoured BBQ sauce
🥄 1/4 c fresh blueberries

🥄Blueberry hot sauce to taste – I’m a big fan of @peppernorth
Mix the flour, salt and pepper together in a mixing bowl. Toss the split chicken thighs in the flour mixture, then air fry the chicken for about 20 minutes.
While the chicken is cooking, add the BBQ sauce and blueberries to a small pot. While cooking over low heat, stir consistently with a wooden spoon. Crush the berries a bit with the wooden spoon and allow the mixture to thicken.
Once the sauce has thickened and the chicken has cooked, toss the chicken in the sauce and enjoy the wings!
These are great served with a side of fries!

Chicken Club Quesadilla

Chicken Club Quesadilla

Check it out…first I was making chicken club wraps, but then I was thinking it would be super yummy to eat this as a quesadilla!  Why does this matter?  To me it matters because it’s easier to prep the same proteins and use the same carbs, than it is to keep prepping new proteins again and again.  Although not traditionally Mexican, this was delicious!

 

Serves 1

🥄 ½ chicken breast, grilled and cut into small cubes
🥄 ⁣1 slice turkey bacon, cooked and diced
🥄 2 whole grain wraps
🥄 ⁣2 tbsp grated cheddar cheese
🥄 Cooking oil spray
🥄 ⁣Plain Greek yogourt for dipping

Create each quesadilla by putting onto one half of each tortilla, ¼ of the cheese, followed by the half of chicken and half of turkey bacon, then the remaining cheese.  (The idea here is to be able to use the cheese as the glue to keep your tortilla closed.)  Close the tortillas.  Give a frying pan, set over medium heat, a quick spray with your cooking spray.  Put the closed tortillas into the pan, and cook each side for about 3 minutes.  Make sure to flip gently!  Remove from the pan, and cut each quesadilla in half.  Enjoy with a side of Greek yogourt for dipping

Chicken Club Wrap

Chicken Club Wrap

I love me a good chicken club – and swapping the traditional bacon for turkey bacon keeps things healthy.  I usually favour sandwiches, but sometimes it’s good to switch things up, right?  These wraps by @latortillafactory are only 70 calories a wrap.  Whoohoo! Two wraps for lunch?  Yes please!

Serves 1

🥄  ½ chicken breast, grilled and thinly sliced
🥄 ⁣1 slice turkey bacon, cooked and diced
🥄 1 tbsp light mayo
🥄 ⁣1 ½ tbsp grated cheddar cheese
🥄 Salad greens

Fill each wrap with half the toppings, roll and enjoy!

Bacon and Potato Bowl

Bacon and Potato Bowl

If you’re a member of @teamstronggirls, you might have seen the great turkey bacon debate recently go down.  Let me say this about turkey bacon: (a) it’s a vastly better choice than traditional bacon (b) not all turkey bacon is created equal (c) @preschoice blue menu turkey bacon is a leaner choice than a lot of other turkey bacon on the market.

If any of that matters to you, those are my thoughts, for what they’re worth.  If that doesn’t matter to you, no worries!  This dinner is still bang up delicious.  It’s perfect to put together at the last minute, and it’s so good.  You might never want to eat anything else again…

This scales perfectly, and is highly likely to be a hit for the whole family.

Serves 1

🥄 3 small/medium yellow potatoes, peeled and cut into cubes
🥄 ⁣5 slices turkey bacon, chopped
🥄 2 tbsp grated cheddar cheese
🥄 ⁣2 tbsp Greek yogourt
🥄 1 green onion, sliced

Put your potatoes into the air fryer, and cook through.  Mine take about 20 – 25 minutes.  While the potatoes are cooking, put the cut turkey bacon into a frying pan, and cook over medium heat, until crisped through.  Once crispy, set aside.

Put the cooked potatoes into a bowl, top with the turkey bacon, Greek yogourt and green onion.

Enjoy thoroughly!

Fried Plantain & Scrambled Eggs

Fried Plantain & Scrambled Eggs

This is a perfect weekend breakfast – it’s quick and easy to put together, but tastes oh so good.  I seriously still just can’t get enough plantain…breakfast, lunch or dinner, I’ll take it!

Serves 1

🥄 1 plantain, sliced
🥄 ⁣Cooking oil spray
🥄 Salt & pepper
🥄 ⁣2 eggs
🥄 2 tbsp almond milk

Slice the plantain, quickly coat with a spray of oil (I like to use coconut oil) and a sprinkle of salt.  Air fry for about 10 minutes, flipping half way.

While the plantain is cooking, scramble the eggs along with a bit of almond milk and some salt and pepper. Cook over medium heat.

Enjoy your brunch!

BBQ Chicken Poutine

BBQ Chicken Poutine
So, I’ve pretty definitively concluded that any potato + any meat + any cheese is an ongoing winning combination for me.
Serves 1
🥄 1 sweet potato, peeled and fry cut
🥄 ⁣1 c shredded chicken breast
🥄 1/4 c BBQ sauce – I love @ghughessugarfree
🥄 ⁣1/4 c shredded pizza mozzarella
🥄 1 green onion, sliced
Cook the sweet potato in your air fryer for about 20 minutes. Once the fries are cooked, pile them onto a parchment paper lined cookie sheet.
Heat the shredded chicken in the microwave along with the bbq sauce. Once heated, pile the chicken on top of the fries, then top with the cheese and green onion.
Pop under the broiler for about 3-4 minutes or until the cheese becomes melty.
Enjoy!

Mexican Inspired Corn Salad

Mexican Inspired Corn Salad
Guys!! Fresh corn is in season right now!!!! This is a fleeting bit of summer goodness, so you’ve got to use it all the ways that you can. This corn salad was so perfect with fresh corn!!!

Serves 1

🥄 1 cob corn, cooked and kernels cut off
🥄 1 c shredded chicken breast
🥄 ⁣6 grape tomatoes, halved
🥄 1 green onion, finely sliced
🥄 1/2 orange bell pepper, finely chopped
🥄 ⁣2 tbsp cilantro, chopped
🥄 1/2 avocado, cut into cubes
🥄 1 like, juiced
🥄 ⁣1/4 tsp salt
🥄 1/2 tsp cumin

Gently reheat the chicken gently, then mix all ingredients together well, and enjoy this delicious salad!

Ceviche with Fried Plantain

Ceviche with Fried Plantain
Goodness me – there is so much action happening on this plate I can barely contain myself!!!

First – let’s talk about how awesomely summer fresh ceviche is! Talk about zero heating up of your kitchen.

Next – plantain – how have I never made fried plantain at home before? I’ve had plantain while vacationing before, but never thought to make it at home. Well, joke is definitely on me…I was the one missing out. This is like the best comfort food ever!

Ok – to whip this up yourself and make 2 servings:

For the plantains:
🥄 ⁣1 plantain, sliced
🥄 Sea salt
🥄 ⁣Spray-based cooking oil

Coat the sliced plantain with a quick shot of your oil spray (both sides), then a sprinkle of sea salt. Cook in your air fryer for about 10 minutes, flipping after 5 minutes. Do not overlap the slices. If you need to, cook the plantain in two batches.

For the ceviche:
🥄 1 lb cooked shrimp, cut into bite sized pieces
🥄 ⁣4 limes
🥄 1/2 cucumber, diced into small pieces
🥄 ⁣1 orange bell pepper, cut into small pieces
🥄 10 grape tomatoes, halved
🥄 ⁣1 avocado, cubed
🥄 2 tbsp cilantro
🥄 ⁣1 fresh jalapeño (or a few pickled jalapeños, if that’s what you’ve got)
🥄 1/2 tsp salt

Set the cooked shrimp in a dish with 3 juiced limes and allow to sit in the fridge for 1-2h in order to allow the lime flavour to transfer to the shrimp. Drain the shrimp, then add to a bowl the shrimp along with all remaining ingredients (plus the juice of the remaining lime). Mix through and enjoy.

Technically (and traditionally) you can do this with raw shrimp and allow the acidity from the lime juice to cook the shrimp, but I erred on the side of food safety and stared with cooked shrimp. It was still perfectly delicious!
