Bacon and Potato Bowl
If you’re a member of @teamstronggirls, you might have seen the great turkey bacon debate recently go down. Let me say this about turkey bacon: (a) it’s a vastly better choice than traditional bacon (b) not all turkey bacon is created equal (c) @preschoice blue menu turkey bacon is a leaner choice than a lot of other turkey bacon on the market.
If any of that matters to you, those are my thoughts, for what they’re worth. If that doesn’t matter to you, no worries! This dinner is still bang up delicious. It’s perfect to put together at the last minute, and it’s so good. You might never want to eat anything else again…
This scales perfectly, and is highly likely to be a hit for the whole family.
Serves 1
🥄 3 small/medium yellow potatoes, peeled and cut into cubes
🥄 5 slices turkey bacon, chopped
🥄 2 tbsp grated cheddar cheese
🥄 2 tbsp Greek yogourt
🥄 1 green onion, sliced
Put your potatoes into the air fryer, and cook through. Mine take about 20 – 25 minutes. While the potatoes are cooking, put the cut turkey bacon into a frying pan, and cook over medium heat, until crisped through. Once crispy, set aside.
Put the cooked potatoes into a bowl, top with the turkey bacon, Greek yogourt and green onion.
Enjoy thoroughly!
Fried Plantain & Scrambled Eggs
This is a perfect weekend breakfast – it’s quick and easy to put together, but tastes oh so good. I seriously still just can’t get enough plantain…breakfast, lunch or dinner, I’ll take it!
Serves 1
🥄 1 plantain, sliced
🥄 Cooking oil spray
🥄 Salt & pepper
🥄 2 eggs
🥄 2 tbsp almond milk
Slice the plantain, quickly coat with a spray of oil (I like to use coconut oil) and a sprinkle of salt. Air fry for about 10 minutes, flipping half way.
While the plantain is cooking, scramble the eggs along with a bit of almond milk and some salt and pepper. Cook over medium heat.
Enjoy your brunch!
Cheddar Jalapeno Breakfast Muffins
Savory things can be better than sweet things, when you’re in the mood! I have been dreaming about these for weeks and only finally now got around to making them. And they’re great!
Makes 12 muffins
🥄 1 c quick oats
🥄 8 eggs
🥄 ½ c almond milk (or milk of choice)
🥄 2 jalapeno peppers, seeded and diced
🥄 1 yellow onion, finely diced
🥄 2 cloves garlic, finely chopped
🥄 1 tsp salt
🥄 2 tsp baking powder
🥄 4 slices turkey bacon, cooked and chopped
🥄 ½ c cheddar cheese, grated
Saute the jalapeno pepper, onions and garlic over medium heat (spray the pan with a little cooking oil first). Once the peppers and onions have softened, remove from heat.
In a mixing bowl, mix together all ingredients.
Divide into 12 muffin cups. I recommend using parchment paper liners to avoid sticking. Bake at 375F for 25 minutes.
Enjoy!
Savory Waffles
Who else just does not follow along with the whole waffles and maple syrup thing? I don’t know why, but this has literally never ever been my thing. Like ever. But the other day I started thinking about savory waffles and I wondered if they could be a thing. They could be a thing! And I like them!
Serves 1
🥄 ¼ c high protein waffle mix (I like Kodiak cakes)
🥄 ¼ c water
🥄 ½ tsp garlic powder
🥄 ½ tsp onion powder
🥄 1 tsp mixed Italian herbs
🥄 1 egg
🥄 1 slice turkey bacon, cooked and chopped
🥄 2 tsp grated parmesan
🥄 Fresh chives
Mix together the waffle mix, water, garlic powder, onion powder and Italian herbs. Pour into your waffle maker.
While the waffle is cooking fry your egg.
Top the waffle with the fried egg, cooked and chopped turkey bacon, parmesan and the chives. Dig in and enjoy!
I’ve got an abundance of dill these days, as my little garden is yielding all the dill I can manage!
These scrambled eggs make a beautiful weekend breakfast. I served it with a side of toast and some wilted spinach.
Serves 1
🥄 2 eggs
🥄 2 – 4 tbsp milk of choice
🥄 Salt & pepper
🥄 2 tbsp fresh dill
🥄 ¼ c feta cheese, crumbled
Mix together the eggs, milk, salt and pepper. Pre-heat a frying pan over medium heat, spray a frying pan with non-stick spray. To scramble, pour the eggs into the pan, allow to partially cook, then turn with a spatula to break up while cooking. Once the eggs are cooked through, top with the dill and feta cheese. Turn off the burner and cover the pan with a lid to retain heat. Once the cheese is melted, gently slide off the pan, onto the plate and enjoy.

Fried Eggs with Shaved Asparagus
Sometimes just a little tweak changes everything! In this case…a little tweak – shaving my asparagus totally changes the asparagus into a fun twist on your fork salad instead of a cooked veggie that needs cutting! As a bonus – no cooking required.
Serves 1
🥄 1 small bunch asparagus
🥄 2 eggs
🥄 1 lemon
🥄 Salt & pepper
Start by using your vegetable peeler to peel the asparagus into thin slices. Hold the stalk by the woody end (instead of breaking it off) and support the backside of the stalk with your index finger. It took me a couple of spears to get the hang of this – but it’s actually pretty easy once you get going. Easy does it!
Add your peeled asparagus to a bowl and top with salt and pepper to taste, and the zest and juice of one lemon. Allow this to sit together (the flavours will come together nicely), while you fry the eggs.
Drain and excess liquid from the asparagus, and transfer to a plate. Top the asparagus salad with your fried eggs, and brunch is served! The yolks become a yummy dressing for the whole dish.
Chocolate Yogourt
So, right now I’m working towards a fitness photo shoot. That means stripping off some fat to let my myscle shine through. I’m not doing anything extreme in the way that I eat, but I am being a bit more mindful. But chocolate cravings are real. And they need to be satisfied. You have to use your imagination a little bit, but truly only a little to enjoy this. It tastes way more like chocolate mousse than you would think.
Serves 1
🥄 1 c plain Skyr
🥄 1 tbsp cocoa powder
🥄 5 drops dark chocolate flavoured stevia
🥄 2 tbsp sugar free chocolate chips
Stir all of the ingredients together, except for the chocolate chips. Once stirred through, add the chocolate chips and enjoy!
