Greek Turkey Burgers

These Greek burgers blew my mind!  The burgers were moist, the toppings were perfect.  A little mini-escape enjoyed by my tastebuds right in my own back yard!  Even my husband – who is a die hard for beef burgers – was impressed with these.  The zucchini really helps to keep the turkey moist, so I do not recommend skipping this step. 

Makes 6 servings

🥄  2 lb extra lean ground turkey
🥄 ⁣ 1 ½ tbsp Greek seasoning
🥄  4 small zucchinis finely grated and squeezed dry
 ⁣
🥄  4 slices feta cheese
🥄 ⁣ 4 tbsp sliced Kalamata olives
🥄  Pickled red onions
🥄 ⁣ 4 whole wheat buns

Mix together the ground turkey, Greek seasoning and grated zucchini.  Form into 6 patties.  Grill on the barbeque.

Top each burger with a slice of feta cheese, 1 tbsp olives and a few pickled red onions.  Serve on a whole wheat bun.

Greek Quinoa Bowls

Greek Quinoa Bowls

🥄  ⁣200 g quinoa, cooked per package directions
🥄  4 grilled chicken breasts, cubed
🥄 ⁣ 200 g feta cheese, crumbled
🥄  1 red pepper, diced
🥄  1 green pepper, diced
🥄  ⁣1 orange pepper, diced
🥄  1 medium red onion, diced
🥄 ⁣ 2 tbsp mixed Greek seasoning
🥄  ⁣Juice of 2 lemons

Mix all ingredients together, portion into bowls, and enjoy.

Serves 4

Fries Supreme

This combination NEVER fails to disappoint me.  It tastes like eating the most delicious platter of pub-night goodness, but is 100% fully part of my healthy eating goals.

🥄 ⁣1 sweet potato, fry cut
🥄200 g extra lean ground turkey
🥄 ⁣½ red, yellow or orange pepper, diced
🥄1 tbsp taco seasoning
🥄 ⁣1 green onion, sliced
🥄2 tbsp banana peppers (optional)
🥄 ⁣1/4c shredded cheddar cheese
⁣

Set the sweet potato to cook in the air fryer – about 25 minutes at 390F should do it, but keep an eye on the sweet potato fries as they cook.⁣
⁣
While the fries are cooking, pan fry the ground turkey along with the taco seasoning.  Drain any excess fat and set aside.⁣
⁣
Line a baking sheet with parchment paper.  Once the fries are cooked, pile the fries on the tray.  Top the fries with the cooked ground turkey, followed by both types of peppers and the green onion.  Top with cheddar cheese.⁣

Set the tray under the broiler for about 3 minutes, or until the cheese has melted.⁣

Chocolate Cherry Yogourt Bowl

Chocolate Cherry Yogourt Bowl

This decadent yogourt bowl is perfect for those occasions when you feel the need to scratch the itch for a dessert but are working hard to keep your healthy eating goals on track

🥄 ⁣1 cup plain Skyr (or Greek yogourt)
🥄1 cup pitted cherries, halved or quartered
🥄 ⁣¼ cup toasted unsweetened coconut flakes
🥄 A few drops chocolate-flavoured stevia
🥄 ⁣A drizzle of your favourite sugar free chocolate sauce

Mix the stevia into the Skyr.  Top with the cherries, coconut and chocolate sauce.  Enjoy!

Grilled Chicken & Sweet Potato Salad

Grilled Chicken & Sweet Potato Salad

But….that doesn’t mean I won’t be doing my best to make the meals yummy!⁣
⁣
🥄 1 grilled chicken breast, cubed
🥄 ½ sweet potato, cubed and roasted (or air fried)⁣
🥄 Salad greens
🥄 ½ sweet potato, cubed and roasted (or air fried)⁣
🥄 ¼ cup plain Greek yogourt
🥄 ½ tbsp taco seasoning⁣
🥄 ½ lime, juiced


To make the dressing, mix together the Greek yogourt, taco seasoning and lime juice.

Top salad greens with warmed chicken and sweet potato.  Top with the dressing.

Cheddar cheese makes an excellent additional topper to this salad!

Egg and Potato Brunch

This is THE ultimate brunch combo.  Perfect for these #StayHome times when you’ve got time to prepare breakfast that’s more elaborate than grab and go.

  • 🥄 1 medium baking potato, thinly sliced
  • 🥄 2 eggs
  • 🥄 2 slices turkey bacon, diced
  • 🥄 1 green onion, finely chopped
  • 🥄 1 tbsp parmesan cheese, finely grated

Air fry the sliced potatoes (they should take about 20 – 25 minutes, depending on how many potatoes you have in the air fryer.  While the potatoes are cooking, cook the turkey bacon over medium heat in a frying pan.  Set aside.  Once the potatoes are very nearly finished, fry both eggs in a lightly greased frying pan.  Once the potatoes are cooked, turn onto a plate.  Top the potatoes with the fried eggs, turkey bacon, green onion and parmesan cheese.

Exploded Baked Potato Bowl

This combination is everything you love about a baked potato in bowl form.  And since pretty much everything is better in a bowl, is there anywhere to go wrong?  I don’t think so!

  • 🥄 200g yellow potatoes, peeled and cubed
  • 🥄 5 slices turkey bacon, diced
  • 🥄 2 tbsp greek yogourt
  • 🥄 1 green onion finely chopped
  • 🥄 1/4 c shredded cheddar cheese

Cook the potato in salted boiling water until it easy breaks apart with a fork.

While the potato is cooking, fry the chopped turkey bacon over medium heat.

Once the potato is cooked, drain well.  Put the potato into a bowl and top with turkey bacon, greek yogourt, cheese, and green onion.  Enjoy!!!

Ginger Beef, Broccoli and Mushroom Stir Fry

In these days of fewer trips to the grocery store, I try to stock up on pantry staples in order to maximize my meal alternatives.  Broccoli is always one of my go to veggies and it tends to last pretty well in the fridge, as do mushrooms.

To make 4 servings:

  • 🥄 500 g sirloin beef, thinly sliced
  • 🥄 2 heads broccoli, cut into small florets
  • 🥄 2 onions, diced
  • 🥄 600 g mixed mushrooms sliced
  • 🥄 1/4 c soy sauce
  • 🥄 1 – 1/2 piece ginger, finely chopped
  • 🥄 2 cloves garlic, finely diced
  • 🥄 1/2 tsp red pepper flakes
  • 🥄 1 c brown rice, cooked per package directions

Sautee together the ginger, garlic, onion, soy sauce, and red pepper flakes.  Once the onion starts to soften, add the broccoli and mushrooms.  Stir fry until the mushrooms are cooked and the broccoli is beginning to wilt.  Add the beef, and cook until desired level of doneness has been reached.  Serve over rice.

Banana, Peanut Butter and Yogourt Bowl

The perfect afternoon snack – protein, carbs, and fat all rolled together in a time-tested classic combo!

  • 🥄 1 c plain greek yogourt
  • 🥄 5 – 6 drops vanilla flavoured stevia
  • 🥄 1 banana, thinly sliced
  • 🥄 1 tbsp peanut butter

Warm up the peanut butter for 30 seconds in the microwave to get it nice and easy to pour.  Add the greek yogourt to a bowl and stir the stevia through.  Top with the banana and peanut butter.  Enjoy!

Triple Decker Turkey & Avocado Sandwich

Triple Decker Turkey & Avocado Sandwich

Is there anything better than a triple decker sandwich?  Really?  What is there not to love?  Just all goodness.  I made this with leftover turkey, but it’s also equally delicious with chicken!

  • 🥄 125 g turkey breast, thinly sliced
  • 🥄 1/2 avocado, mashed
  • 🥄 3 slices your favourite whole grain bread
  • 🥄 1 tsp hot & spicy mustard

Toast the bread.

Top the first slice of bread with half the avocado, half the mustard and half the turkey.  Top with a slice of bread, repeat the layers (avocado, mustard, turkey) and top with the final slice of bread.

Enjoy!
