Chocolate Mint Overnight Oats

 ⁣Chocolate Mint Overnight Oats

Guys….this is magic!  Chocolate mint is pretty much life, right?  This healthy breakfast (or perfect afternoon snack) is amazing.  Be careful with the peppermint extract and use a light hand – it’s strong stuff!   

Serves 1

🥄 1/3 c rolled oats
🥄 ⁣1 tbsp cocoa powder
🥄 1 ½ c plain Greek yogourt
🥄 ⁣1/8 tsp peppermint extract
🥄 5 – 10 drops chocolate flavoured liquid stevia
🥄 2 tbsp – 1/3 c almond milk (or use your milk of choice)

🥄 ⁣
1 ½ tbsp sugar free chocolate chips (or cocoa nibs)

Mix all ingredients, except for the chocolate chips, together in a container with a lid.  Adjust the amount of milk so that you are able to get the consistency that you like.  I like my oats to be nice and thick, so I only add a touch of milk.  Pop the lid on the container and stick the container in the fridge overnight.  When ready to serve, top with the chocolate chips.

Egg and Potato Brunch

This is THE ultimate brunch combo.  Perfect for these #StayHome times when you’ve got time to prepare breakfast that’s more elaborate than grab and go.

  • 🥄 1 medium baking potato, thinly sliced
  • 🥄 2 eggs
  • 🥄 2 slices turkey bacon, diced
  • 🥄 1 green onion, finely chopped
  • 🥄 1 tbsp parmesan cheese, finely grated

Air fry the sliced potatoes (they should take about 20 – 25 minutes, depending on how many potatoes you have in the air fryer.  While the potatoes are cooking, cook the turkey bacon over medium heat in a frying pan.  Set aside.  Once the potatoes are very nearly finished, fry both eggs in a lightly greased frying pan.  Once the potatoes are cooked, turn onto a plate.  Top the potatoes with the fried eggs, turkey bacon, green onion and parmesan cheese.

Egg, Avocado and Toast

This standby is a weekend favourite at our house:

🥄 slice “Power Bread”(high protein bread), toasted

🥄 ½ mashed avocado

🥄 1 fried egg

That’s all there is to be said. It’s perfect with a cup of coffee on Sunday morning.

Apple & Caramel Crepe

In the event that you’re craving the delicious things right now, try this tasty crepe⁣
⁣
To make the crepe:⁣
🥄 1 scoop vanilla protein powder⁣
🥄 1/2c egg whites⁣
Mix well (use an immersion blender if you have one) and pan fry in a large pan.⁣
⁣
Separately thinly slice a Granny Smith Apple and sautee in butter. Fill the crepe with the apple and drizzle with a bit of caramel sauce. ⁣
⁣
Comfort food doesn’t have to be junk food. ⁣
⁣

Egg & Potato Skillet

Oh hi! Are you ready to brunch?⁣
⁣
If you’re having a lazy Sunday tomorrow, this is the perfect meal for you! It’s full of all the good things – satisfying your tummy and your taste buds for hours.⁣
⁣
Over medium heat, wilt chopped kale. Add seasoned cooked ground turkey, 2 eggs and sliced roasted sweet potato. Top with crumbled goat cheese, cover and allow the eggs to cook through. Top with some hot sauce, If that’s how you roll. Enjoy 😋⁣

Alpaca Spoon

Throw this easy breakfast bowl together in 3 minutes or less.⁣
⁣
1 cup Greek yogourt, 1 tablespoon of shredded coconut, and 1/2 cup of raspberries. Stir and enjoy!⁣

Pumpkin Spice Oats

Pumpkin Spice and Everything Nice! 🍁 🍂🍁⁣

Pumpkin spice oatmeal is a tummy-warming way to start any fall day.⁣
⁣
In a small pot over low-medium heat, add 1/3c oats, 1/3c almond milk, 1/4c pumpkin purée (not pie filling), 2 tbsp erythritol-based brown sugar sweetener and 1/2 tsp pumpkin pie spice. Stir until thickened and enjoy. 😋⁣
⁣
You can prep this ahead of time too. Just reheat in the microwave and add additional almond milk to loosen up the oatmeal as needed.⁣

Steak & Egg Bagel

Toast a bagel, fry an egg, top with shaved sirloin and some cheddar cheese. Enjoy 😋⁣

Spicy Chocolate Granola

🤩 Spicy Chocolate Granola 🤩⁣

I LOVE granola, and I love spicy chocolate anything. Mexican hot chocolate…so good right? I got to thinking spicy chocolate + granola would be a winning combination. Turns out that it is!⁣
⁣
Most granola is super high in sugar, despite its healthy reputation. My thanks to @superhealthykids for the inspo on this sugar-free adaptation. My version adds some stevia-based sweetener, and cocoa powder, but still is a real reduction in sugar over most commerical granolas.⁣
⁣
Stir this into your morning Greek yogourt (Or Skyr). It’s a combo you’ll never want to turn your back on!⁣
⁣
To make 4 servings:⁣
⁣
1 1/3 c rolled oats⁣
1/2 tsp kosher salt⁣
1/2 tsp cayenne pepper (adjust to your own taste)⁣
1/4 c cocoa powder⁣
4 packets stevia sweetener⁣
4 egg whites⁣
⁣
Preheat your oven to 225F.⁣
⁣
In a bowl, mix all ingredients except for the egg whites. In a separate bowl, whip the egg whites until soft peaks form. Gently fold the egg whites into the oat mixture, ensuring all the oats are well coated.⁣
⁣
Spread the oats on two cookie sheets lined with parchment paper, and bake for 40 minutes, stirring halfway. ⁣
⁣
Allow the granola to cool fully before placing in an air tight container for storage.⁣
⁣

Cheesecake Breakfast

Cheesecake for breakfast? Heck, yes! I am totally loving everything about this right now. It’s sooo delicious!⁣

Healthy Deconstructed Raspberry Cheesecake ⁣
⁣
1 cup quick oats⁣
3 tbsp butter ⁣
3 tbsp brown-sugar stevia ⁣
2 c Skyr ⁣
1 c light ricotta⁣
1 c frozen raspberries⁣
⁣
First make the topping: In a mixing bowl, combine the oats and stevia, then cut in the butter using two forks, until all the butter is broken up into small pieces – no larger than the size of a lentil. Pack this mixture into the bottom of a non-stick pan, and bake for 20 minutes at 350. Remove from oven, crumble the mixture and set aside.⁣
⁣
Mix together the Skyr and ricotta.⁣
⁣
Heat the berries gently on the stove top or microwave, and mash throughly.⁣
⁣
Divide the Skyr/ricotta mixture into 4 portions. Top each portion with 1/4 of the the crumbled oat topping and then 1/4 of the mashed berries. Enjoy as is, or add a drizzle of maple syrup for some added sweetness.⁣
