Pulled Pork on a Bun

Just because I’ve got big goals (like visible abs) does not mean that I don’t eat a wide variety of foods.  I woke up the other day and was really feeling pulled chicken.  No problem!  This fully fits within my eating plan.  I loaded up heavy on the chicken, watched how much mayo I was using, and made sure to use a whole grain bun.  This was still one finger lickin’ good lunch!

Serves 1

🥄 ¾ c shredded chicken breast, reheated
🥄 ⁣2 – 3 tbsp sugar free barbeque sauce  (I like G Hughes brand)
🥄 1/3 c cauliflower slaw
🥄 ⁣1 tbsp light mayo
🥄 1 whole grain bun

Mix the shredded chicken with the barbeque sauce.  Mix the mayo with the cauliflower slaw.  Toast the bun, top, and enjoy!

PS: I like to buy bagged all of cauliflower, broccoli and kale slaw at my grocery store for easy to prep meals like this one.  I also sometimes wilt it a little in a frying pan, or just throw some salad dressing on it straight out of the bag.  These prepared slaws are great time savers and a perfect way to up your veggie intake.

Birthday Cake Protein Bars

Birthday Cake Protein Bars

If you weren’t feeling the chocolate protein bars I made a few weeks back, maybe these birthday cake protein bars are more of your jam?  I won’t judge…okay…maybe I will judge, but only a little.  Let me know in the comments below if chocolate or vanilla wins for you!

Makes 8 bars

🥄 ⁣1 1/3 c quick cooking oats
🥄 4 whole eggs
🥄 ⁣2 scoops vanilla protein powder
🥄 1/2c + 2 tbsp almond milk
🥄 ⁣1 – 2 tbsp birthday cake sprinkles

Preheat oven to 350F.  Mix all ingredients, except the sprinkles together in a mixing bowl.

Line an 8 x 8 baking tin with parchment paper, and pour the batter in.  Pop into the oven and bake for 20 – 25 minutes.  5 minutes into baking, sprinkle the bars with the birthday cake sprinkles.

Rocky Road Protein Bars

Rocky Road Protein Bars

THESE. ARE. SO. GOOD.  Do not miss!  My fantastic coach recently asked me to create for her something super chocolatey.  And so, here you have it.  These truly are super chocolatey.  They will 100% satisfy your chocolatey cravings.  And you’ll have zero guilt while doing so!

Makes 8 bars

🥄 1 ¼ c rolled oats
🥄 ⁣¼ c cocoa power
🥄 2 scoops chocolate protein powder
🥄 ⁣4 whole eggs
🥄 ½ c + 2 tbsp almond milk
🥄 ⁣¼ c chopped walnuts
🥄 2 tbsp sugar free chocolate chips

Preheat the oven to 350F.

Add all ingredients to a mixing bowl and stir through very well.

Line an 8 x 8 square baking tin with parchment paper.  Pour the batter into the baking tin.  If needed shake the pan to distribute the batter evenly.

Bake for 20 – 25 minutes, or until a toothpick inserted in the centre of the tin comes out clean.

Once cooled, slice into 8 bars and enjoy!

Chipotle Pork and Rice Bowl

Chipotle Pork and Rice Bowl

Guys…these are absolute magic!  It took me a couple of tries to get the right combination, but after a few days I nailed it.  I tried cheddar cheese, I tried Greek yogourt, I tried guac, but eventually settled on this.  And now I can’t stop eating it.  I have some shredded pork in my freezer still, and I’m pumped to be able to keep making these bowls next week.

These are perfect to meal prep.  Even if you’re living the #WHF life right now, the days are busy, and double so, if you’re a mama.  So, a little Sunday meal prep still goes a long way to keeping your week on track.

Serves 4

🥄 1 c brown rice
🥄 ⁣3 limes
🥄 2 tbsp cilantro (cleaned and chopped)
🥄 ⁣6 c chicken stock
🥄 2 pork tenderloins
🥄 ⁣2 avocados
🥄 2 tbsp chopped chipotle peppers in adobo sauce

🥄 ⁣1 c salsa
🥄 4 green onions

Cook the brown rice in 2 cups of chicken stock along with the cilantro and the zest and juice of one of the limes.  This adds lots of yummy flavour to your rice!

Shrimp Fried Rice

Shrimp Fried Rice

Mmmm – fried rice is so awesome!  I love it and could eat it very day!  The prep only takes a few minutes, and it’s super easy, and it’s really forgiving.  Just use the protein and veggies that you have on hand.  Do make sure to cook your rice ahead and pull it out of the fridge just before you’re going to use it.  I have no idea why this works, but it seems to be the trick to authentic tasting fried rice.

Serves 1

🥄 2 tsp sesame oil
🥄 ⁣¾ c brown rice, cooked a day ahead and stored in the fridge overnight
🥄 1 small yellow onion, cut into small dice
🥄 ⁣1 clove garlic, diced
🥄 2 c peeled and deveined raw shrimp
🥄 ⁣1 c frozen peas
🥄 1 tbsp soy sauce

Set a frying pan over medium heat, and add the sesame oil.  Once the oil has warmed, add the onion and garlic.  Once the onion begins to soften, add the brown rice.

In a separate small frying pan, cook the shrimp over medium heat, tossing frequently to ensure even cooking.  Once the shrimp has cooked, remove from heat, and drain any excess cooking liquid.

Add the frozen peas to the rice.  Once the peas are fully thawed and the rice is nicely warmed, add the shrimp any soy sauce.  Toss through, and enjoy.

Greek Turkey Burgers

Greek Turkey Burgers

These Greek burgers blew my mind!  The burgers were moist, the toppings were perfect.  A little mini-escape enjoyed by my tastebuds right in my own back yard!  Even my husband – who is a die hard for beef burgers – was impressed with these.  The zucchini really helps to keep the turkey moist, so I do not recommend skipping this step. 

Makes 6 servings

🥄  2 lb extra lean ground turkey
🥄 ⁣ 1 ½ tbsp Greek seasoning
🥄  4 small zucchinis finely grated and squeezed dry
 ⁣
🥄  4 slices feta cheese
🥄 ⁣ 4 tbsp sliced Kalamata olives
🥄  Pickled red onions
🥄 ⁣ 4 whole wheat buns

Mix together the ground turkey, Greek seasoning and grated zucchini.  Form into 6 patties.  Grill on the barbeque.

Top each burger with a slice of feta cheese, 1 tbsp olives and a few pickled red onions.  Serve on a whole wheat bun.

Greek Quinoa Bowls

Greek Quinoa Bowls

🥄  ⁣200 g quinoa, cooked per package directions
🥄  4 grilled chicken breasts, cubed
🥄 ⁣ 200 g feta cheese, crumbled
🥄  1 red pepper, diced
🥄  1 green pepper, diced
🥄  ⁣1 orange pepper, diced
🥄  1 medium red onion, diced
🥄 ⁣ 2 tbsp mixed Greek seasoning
🥄  ⁣Juice of 2 lemons

Mix all ingredients together, portion into bowls, and enjoy.

Serves 4

Celery Chicken

Celery Chicken . . . that’s a thing, right?  Apparently these days it is for me.  Since we’re working hard not to go out any more than we need to, it’s a matter of eating what’s in the fridge.  Our next grocery run won’t be until midweek, so the pickings are kinda slim, but no matter.  Just making it happen over here.

To make 4 servings:

🥄   Make your rice per package directions.

🥄 Saute 4 diced chicken breast in a pan over medium heat. Add a few of your favourite dried herbs for flavour – I used some oregano and basil.  Remove from the pan and set aside.

🥄 Add to your pan 2 diced red onions, 1 head of chopped celery and 2 diced cloves of garlic. Saute until soft.

🥄 Add the chicken back to the pan, along with the cooked rice.

🥄 Top each serving with 2 tbsp with chopped roasted almonds

Korean Beef

Happy Friday, Friends! This yummy spin on Korean beef is well worth making. I’ve enjoyed every single bite this week. ⁣
⁣
To make 4 servings:⁣
🥄 1 lb extra lean ground beef⁣
🥄 1 tbsp garlic-ginger paste⁣
🥄 1/4c surkin gold or other brown sugar type sweetener⁣
🥄 1/4c soy sauce⁣
🥄 2 tsp sambal oelek, or other hot sauce⁣
⁣
Pan fry the ground beef and drain. Return to pan, and add remaining ingredients. Stir through over low heat.⁣
⁣
Serve over brown rice and top with diced green onion and sesame seeds.⁣
