Peach Pie Yogourt Bowl
I want to state my case here for frozen fruit. When fruit isn’t in season, I would seriously rather eat thawed fruit than the out of season offering available. Frozen fruit is just as nutritious as fresh and honestly can taste better out of season. This simple yogourt bowl channels peach pie, but stays healthy.
Serves 1
🥄 1 c sliced peaches
🥄 1 c plain Greek yogourt or Skyr
🥄 2 tbsp chopped nuts (pecans or walnuts are my favourite)
🥄 A few drops of vanilla flavoured stevia
Mix through and enjoy!
Cheddar Jalapeno Breakfast Muffins
Savory things can be better than sweet things, when you’re in the mood! I have been dreaming about these for weeks and only finally now got around to making them. And they’re great!
Makes 12 muffins
🥄 1 c quick oats
🥄 8 eggs
🥄 ½ c almond milk (or milk of choice)
🥄 2 jalapeno peppers, seeded and diced
🥄 1 yellow onion, finely diced
🥄 2 cloves garlic, finely chopped
🥄 1 tsp salt
🥄 2 tsp baking powder
🥄 4 slices turkey bacon, cooked and chopped
🥄 ½ c cheddar cheese, grated
Saute the jalapeno pepper, onions and garlic over medium heat (spray the pan with a little cooking oil first). Once the peppers and onions have softened, remove from heat.
In a mixing bowl, mix together all ingredients.
Divide into 12 muffin cups. I recommend using parchment paper liners to avoid sticking. Bake at 375F for 25 minutes.
Enjoy!
Savory Waffles
Who else just does not follow along with the whole waffles and maple syrup thing? I don’t know why, but this has literally never ever been my thing. Like ever. But the other day I started thinking about savory waffles and I wondered if they could be a thing. They could be a thing! And I like them!
Serves 1
🥄 ¼ c high protein waffle mix (I like Kodiak cakes)
🥄 ¼ c water
🥄 ½ tsp garlic powder
🥄 ½ tsp onion powder
🥄 1 tsp mixed Italian herbs
🥄 1 egg
🥄 1 slice turkey bacon, cooked and chopped
🥄 2 tsp grated parmesan
🥄 Fresh chives
Mix together the waffle mix, water, garlic powder, onion powder and Italian herbs. Pour into your waffle maker.
While the waffle is cooking fry your egg.
Top the waffle with the fried egg, cooked and chopped turkey bacon, parmesan and the chives. Dig in and enjoy!
Eggplant Fries
When you’re trying to consume more veggies, sometimes you’ve got to get out of your comfort zone and try something different. These eggplant fries surprised me like crazy. They took a longer than I expected to get crispy, but once they had crisped up – they were a dream!
Makes 1 large bowl
🥄 1 medium sized eggplant, cut into fry-sized pieces
🥄 1 tsp chili-lime seasoning
Toss your eggplant in the chili-lime seasoning (I like Trader Joe’s), then toss your eggplant into the air fryer. Mine too about 40 minutes at 390F. I recon this specialty is air fryer specific – I’m not sure you’d get the same results in the oven, unfortunately.
Quick Pickled Green Beans
Who else is obsessed with crunchy-salt-and-vinegar things? I love love love quick pickled green beans. They satisfy my craving for salty crunchy things without giving into a bag of chips. These are kinda high in sodium, so watch how often you eat these, but they’re so good. And so easy!
Makes 2 – 750 mL mason jars
🥄 1 lb French beans
🥄 1 tbsp kosher salt
🥄 1 c white vinegar
🥄 4 cloves garlic, smashed
🥄 1 tbsp whole peppercorns
Other herbs and spices as you like. I like to add some red pepper flakes and fresh dill
Add the French beans to a pot of boiling water and boil for 2 minutes – just long enough to blanch. Remove from the boiling water and soak in ice cold water to stop the cooking process.
Into the bottom of each of your two mason jars, add ½ tbsp kosher salt and ½ c vinegar. Put the lid onto each jar, and shake well. Once the salt has dissolved, add half of the garlic, half of the peppercorns and the additional herbs that you’re adding. Add half of the green beans to each jar. Once all the beans are in, add cold water to each jar to fill the jar fully. Replace the lid and then turn over several times to distribute the herbs and spices. Allow the beans to sit for at least a day to develop flavour. Eat within 5 days.
My mom recently asked me if I could do a healthy spin on a family favourite dessert. Now, to be clear, this does not taste like her amazing dessert. BUT it does taste super chocolatey, and its healthy enough to eat every day completely guilt free. So, I’ll take it. But I’ll still be looking forward to the next time my mom makes the original!
Serves 1
🥄 ¼ cup quick oats
🥄 1 tbsp + 1 tbsp cocoa powder
🥄 1 egg white
🥄 ½ c Skyr
🥄 5 – 10 drops chocolate flavoured stevia
Mix together the quick oats, 1 tbsp cocoa powder and the egg white. Press the mixture into a large silicone muffin pan. (I recommend spraying it first with non-stick spray.) Bake the cup for about 15 – 20 minutes at 350F. Remove from the oven. After the cup has partially cooled, remove gently from the muffin pan, and allow to cool fully on a wire rack.
In a separate bowl, mix the Skyr, remaining cocoa powder and the chocolate stevia.
Spoon the Skyr into the chocolate cup, smooth out the top and enjoy!

🥄 3 – 4 fresh mint leaves
🥄 3 – 4 stevia leaves (if you happen to have a plant) – if not, a few drops of liquid stevia will be just fine
🥄 1 lime, juiced
🥄 Soda water
Muddle together your mint leaves, stevia leaves and lime juice. Make sure to muddle well in order to get all the flavour out of your mint and stevia leaves. Add some ice cubes to a lowball glass, pour in the strained muddle mixture and top with club soda. Add a lime wheel to really make it fancy!
