- 🥄 1 medium baking potato, thinly sliced
- 🥄 2 eggs
- 🥄 2 slices turkey bacon, diced
- 🥄 1 green onion, finely chopped
- 🥄 1 tbsp parmesan cheese, finely grated
Air fry the sliced potatoes (they should take about 20 – 25 minutes, depending on how many potatoes you have in the air fryer. While the potatoes are cooking, cook the turkey bacon over medium heat in a frying pan. Set aside. Once the potatoes are very nearly finished, fry both eggs in a lightly greased frying pan. Once the potatoes are cooked, turn onto a plate. Top the potatoes with the fried eggs, turkey bacon, green onion and parmesan cheese.
